
I know, I know, its cold! Us folks here in Sydney are shivering through our coldest week of the year, reading blogs from that other hemisphere extolling the joys of summer, describing watermelon salads and wonderful things to do with stonefruit.
I know, I know, it doesn’t get that cold in Sydney. I mean, there is no ice or snow, but we are stamping out feet, blowing into our hands and rueing this winter all the same.

So how do I ease the pain of winter? With a salad!
I know, I know, it doesn’t seem like the best option. But wait. Eat this Fennel Salad alongside something warming and wintery, and you will get a little shot of sunshine.

Only to be made in winter, when young fennel is at its best, and easy too – recipes are unnecessary.
Jut segment a few sweet, tangy oranges, finely slice as much fennel as you need (including the green tops, if available), deseed a few olives (don’t buy those machine mushy seedless ones, just give your seeded olive a little bit of a squish onto a board with the palm of your hand, see! the seed will loosen up and come right out), pick a few continental parsley leaves, mix together with some good white wine vinegar (or lemon juice), a splash of extra virgin olive oil, sea salt and black pepper. Toss, serve, eat and enjoy the illusion of sweet sunshine and all things summery with this quintessentially winter salad.
* I learnt this salad combination at MG Garage, but don’t remember the exact recipe that we used there. This is my interpretation of that memory.

Lovely salad – isn’t the fennel glorious at the moment. It may not be as cold as other parts of the world, but it certainly feels uncomfortable. Today is the worst day so far I think.
This last week was freezing! I think it is definitely a soup day today – save this salad for when the sun is out again!
