Almost Nicoise.

Don’t you just love it when everything falls into place. Like a spontaneous picnic on a beautiful day, or running into a friend and having a day of detours. Or a night full of dancing and happiness. Or one hot summers morning when you read about Nicoise Salad and realise that you have most of the ingredients just relaxing in the fridge, ready to throw together for a very pleasant lunch which doesn’t require you to go outside in the heatwave, not even one time. Well just this thing happened to me today.

It did mean that I had to turn the stove on, but only briefly, the heat from which isn’t nearly as bad as the afternoon sun that pours into my kitchen, anyway.

This is a great recipe for a heatwave. Light but full of protein and filling, and delicious. If I hadn’t read that article this morning, then I probably would have had grapes and leftover granita for lunch, but this salad seemed perfect for today, all the pieces fell into place, and it was.

Almost Nicoise
serves 2
almost nicoise as my recently un-stocked kitchen is yet to be replenished with capers and anchovies. This recipe isn’t set in stone, adjust, add remove as you please.

3 soft boiled eggs (cover room-temperature eggs in cold water in a small saucepan. Bring to the boil, then turn down to a gentle simmer and cook for 5 mins. Remove and refresh. Peel. The yolks should still be softish and creamy.)
green beans, blanched
100g tinned tuna
potatoes, boiled until tender
2 tomatoes
1/2 spanish onion, finely sliced
salad leaves
olives

for viniagrette:
1T lemon juice,
3T very good extra virgin olive oil
salt and pepper.

Um, mix all ingredients together and serve immediately.
Easy!

    Yes you’re right, Nicoise is one of those thing you unwittingly knew you had all or most of the ingredients for. Looks great! Love the colours and textures :)

    Lorraine: I know! I have actually just wanted to eat Nicoise all week now, and it is so easy because I already have everything in the cupboard. Balance!
