Roast Duck and Noodle Salad, the perfect mid-week indulgence

Sometimes work is such a drag, you know, going to the same place everyday doing that 9 – 5 thing (or til 6 if you’re lucky like me) can really get you down. Holidays feel like they happened an age ago and it’s months until the next long weekend. You wonder why you have to work, why couldn’t I just be independently wealthy and be able to play all day?

Then, in times like these you are thankful and happy to still have your job, even though it takes up almost every waking hour 5 days a week. You are lucky because you are learning loads, meeting cool people and getting paid. This last bit is important so you don’t get evicted, but more importantly, so you can buy some roast duck at your local Chinese BBQ joint.

You can even save some money by buying that duck (cost: 1/2 a bird for $12) instead of going out to eat (cost: much more than $12) and on a work night when your brain hurts, you can whip up this salad. Delicious, decadent and quick (with very little washing up)  just what’s necessary for the middle of a busy week.

Here it is: simple, tasty, quick and filling, perfect for a week night. There might even be some left over for you to take for lunch the next day, just try not to eat it at your desk!

 

Roast Duck and Noodle Salad
(adapted from Bill Grainger’s BBQ Duck and Noodle Salad)
Serves 4

1/2 roast duck from a Chinese BBQ shop
400g egg noodles (I found some that were almost exactly like the Hokkien Noodles we ate in Malaysia, which are nothing like the fat, slippery, flubbery excuses for noodles that pass as Hokkien here at home)
snow peas, cleaned, sliced and doused quickly with boiling water and refreshed immediately
1 red capsicum, finely sliced
2 lebanese cucumbers, sliced,
1/2 bunch coriander, leaves and stems chopped
5 spring onions, sliced.

For the Dressing:
2T soy sauce
2t sesame oil
2T rice wine vinegar
juice of 1 lime
1 long red chilli, finely sliced

Boil noodles according to the instructions on the packet, then refresh them under cold water.
For dressing, combine all ingredients for the dressing, taste and adjust as required.
Pick the duck meat and skin from the bones and place in a bowl with all the other ingredients. Toss with dressing and serve.

    Gorgeous photography and the noodles themselves look nice and luscious too. I agree, sometimes just buying 1/2 a duck and adding noodles and vegetables or even rice and vegetables makes a great, quick meal :)

    Belle: Thanks! I hope you enjoy it. I used thin yellow wheat noodles, I can’t remember the brand, but I will let you know tomorrow when I’ve bought some more. They were delicious, and cook in just a few minutes.

    Awesome photography!
    I totally agree with working 9-5 job. SOmetimes i wish we didnt have to work… and money grew on trees :(

    It can get hectic cooking all the time and it makes life easier to buy bbq duck, chicken or pork.

    Duck is my favorite fowl… although is it technically game? I don’t know, anyway, when you mention “duck,” I’m kind of blind and deaf to everything else. So, so good.

    Mmm. This sounds so good.

    There’s a stall that sells incredible roast duck, about a two minute walk from my workplace. Of course, the queue’s always right out the door but just thinking about having it for lunch gets me out of bed a little quicker in the mornings :)

    I am fortunate enough to live around a few of these joints, nothing beats a takeaway roast and duck and pork! Good work on the noodles, you made a usually ordinary dish into a nice meal (I usually just have it with rice and steamed veg!).
