Pork chops with Beetroot Relish

If Homer Simpson has been right about anything, it’s pork chops *drool*. I grew up watching the Simpsons, but I didn’t really eat pork until I left home so I never knew. I hate to admit it, but masterchef inspiration struck at the butcher, and I had to give these pork cutlet a whirl (though I wouldn’t be putting them in the butane flame like a certain now departed contestant). And they didn’t have beetroot in their mystery box so they couldn’t make this delicious relish as an accompaniment.

No apple sauce to be seen here, though. Just a sour, spicy and sweet beetroot relish. Be careful though, the delicate off white of the pork flesh will be turned hot pink by this condiment. If Homer was right about this, I hate to wonder what else he was right about.

For the Pork Chops: I cooked in them in a hot pan with a little oil, and dash of salt. Pan fried to medium then rested and served with sweet and sour beertoot relish.

Beetroot Relish
From this Gourmet Traveller recipe
Serves 4

125ml apple cider vinegar
2 T brown sugar
½t ground cloves
400 gm (about 2) beetroot, scrubbed, peeled and coarsely grated
1 Granny Smith apple, coarsely grated

Combine Vinegar, sugar and cloves in a small pan and heat until boiling. Stir to dissolve sugar then add the beetroot and apple and some sea salt and cook for a few minutes until tender.

    Wow, that looks great! I have only recently started really liking beetroot and have been on the lookout for interesting things to do with it. This recipe is definitely on the list!

    Yum! Beetroot is one of my favourite vegetables…I love the colour and what a great idea to team it with pork instead of the usual apple sauce. I’m waiting for the beetroot in my garden to grow a bit more before I pull them out and have my way with them :-)

    Love the first pic, looks like it is bleeding! Pork chops are great, I usually simply pan fry with any spices I can get my hands on.

    Ooh yum. This looks tasty! Homer was is so right. Love the idea of combining it with the beetroot relish, the colour you get from the beetroot looks lovely. I haven’t cooked pork chops much before, I might have to give this a go :)

    I love seeing what everyone did to their piece of pork. I love the vibrancy of the beetroot paired with the lightness of the pork. I bet it tasted as good as it looked.

    Looks delicious! Mmmm.. I love pork chops too. And using heaps of beetroot at the moment. Although, it has the downside of doing strange things to your pee… Can I ask why pork was off the menu until you left home?

    Forager: Haha I can’t decide what is worse, beetroot or asapragus, in that department! Well, we mostly ate lamb at home because we grew sheep, and we are jew-ish. Actually, I remember from when I was little that it takes a really long time to digest pork, i think, and my mum thought it wasn’t healthy to eat it – though I later found out that she loves LOVES pork chops. Hilarious!
