The July Daring Bakers’ challenge was hosted by Nicole at Sweet Tooth. She chose Chocolate Covered Marshmallow Cookies and Milan Cookies from pastry chef Gale Gand of the Food Network.
Biscuits remind me of home, family. My Grandma makes wonderful biscuits, my favourites are buttery and crisp with a dark chocolate round pressed into the top. The smell of anzac’s baking transport me to my childhood, in fact biscuits seem to be the first thing youngsters learn to bake, not as difficult as a cake, and ever-so rewarding.

Memorable meals need not be fussy, complex, intricate works of art. They don’t necessarily require expensive ingredients or complicated preparation. Sometimes company and ambience is important, but standing alone in the kitchen sneaking morsels works too. Thats how I remember this curried chickpea dish. Their long slow braising often interrupted by my descending ‘tasting’ spoon, charting their progress from ‘fresh from the tin (bland)’, past the ‘tasty sauce only (mediocre)’ stage to ‘plump, spiced, juicy flavour explosions’. Need I say more?

Soft boiled eggs for breakfast with toast soldiers while convalescing or a greasy fried egg to cure a hangover.
Little orbs of nourishment, eggs are the perfect comfort food. Easy to prepare and most of us always have a few lolling around in the fridge right now.
So, why not tart up your fried eggs a little and turn them into something more than just a hangover cure. Fry the bottoms til crispy and top with some asian flavours and enjoy them in sickness and in health.

I believe that you get what you pay for, mostly. Being cost conscious (ok, I admit it, I’m frugal, I could even be considered tight) even outside of our current GFC-scared environment, I’ve been forgoing cheap disappointments of meals for a while now in order to enjoy a more expensive and luxurious dining experience more often.
But what if those things aren’t mutually exclusive?

Is coriander a part of Puerto Rican cuisine?
Not knowing any Puerto Ricans to ask, and having never visited the country or eaten the food, ever, I asked F. Now, this wasn’t going to be the quickest or best way to get accurate information about the cuisine of this tiny island as F. was in a slightly worse position than I was knowledge-wise regarding Puerto Rico and its cuisine. I had at least skimmed this article in the NY Times about beans and rice. Which is how I got into this mess in the first place.
